So I guess in order for me to build a decent portfolio in game dev, I am definitely needed to dive in with a language of choice. And since, my fav MMO, uses Lua as scripting, then I should learn and get good at Lua, amirite? Therefore, I chose Defold! While learning the ins and outs of Defold, and Lua, I am also writing and making my Game Design Document

Good luck with your game design document. Its a lot of work and it will be appreciated in the right circle of people. Don't worry about the language, as long as you are confident in one things will work out.
